Caymus Cabernet Sauvignon Cabernet Sauvignon 2001

Rated  on Dec 24, 2011

10 years of aging smoothed this one out beautifully. Perfectly balanced. Drank this bottle at dinner (Filet with foie gras and truffle sauce) along with 5 other solid bottles of Napa Cab, including Stags Leap Artemis 07, Nickel & Nickel 05, and Silver Oak 07. The 01 Caymus stole the show. Was tough to go back to the others after this. Glad I have a couple more.

2001 Caymus cabernet ... This wine hasn't changed much since the last time I had it 3 yrs ago. It is still a huge cabernet that hardly budged over the 6 hours it was open. Is this wine impervious to oxygen?? Still, the nosed showed dark fruit, spice, and eventually the typical napa cab nose. In the mouth, just as I remembered yrs earlier, black cheery and currant and very polished with depth.

2001 Caymus Cabernet Sauvignon Cabernet Sauvignon
Score: 96 points
Drink by: Now to 2 years
Color: Dark purple
Nose: Weak but pleasant
Fruit: sweet oak, chocolate
Finish: Long, complex
Price: $67.99

This wine was a lot of fun to look at in the glass (looking at wine usually doesn't excite me). It was a thick inky purple that had an oozing look down the side of the glass. I wish there was more of a nose to inspect although the nose was beautiful and dark. There was a giant attack and presence and a long complex finish. -A good balance of acids and alcohol on both the nose and the palate.

This wine is terrific. Supple, silky, velvety...all these words spring to mind. Dense fruit flavor that kicks into overdrive on the finish which is long and smooth. Nicely balanced tannins...this baby is ready to drink right is delicious...I don't know how it would cellar and I can't imagine it could taste much better than it does right now so I pick drink now to 2 years.
