The rich, full flavors of duck need an equally full flavored wine to accompany it. A rather rich white, such as a German Riesling or off-dry Pinot Gris from Alsace will work with duck cooked with a sweet sauce, but reds are generally better. A Syrah from Cote-Rotie, an Australian Shiraz, or Pinot Noir from France or Oregon work wonders as do bigger-scale reds such as a California Merlot or an Italian Barbera.
